          摘要:

          硝基呋喃是一種人工合成的抗菌藥物,曾一度用于治療畜禽和水產養殖動物疾病,由于高殘留和對部分試驗動物的“三致”作用,被許多國家列為畜禽和水產養殖禁用藥物。本文以FAO/WHO食品添加劑聯合專家委員會(JECFA)第40次會議及歐盟食品安全局(ESFA)的風險評估報告為主要依據,并結合相關的毒理學和膳食暴露數據,探討了其在我國膳食中的暴露情況及對我國人體健康的風險,以期為我國食品中硝基呋喃的監管工作提供參考。[中國漁業質量與標準, 2013,3(2):4-10]
           

          Abstract:

          Nitrofurans is a kind of synthetic antibacterial drug that was used routinely in some countries to treat animal diseases in livestock, poultry and aquaculture. It is not permitted in livestock, poultry or aquaculture because of the long half-life and the teratogenic, carcinogenic and mutagenic adverse effects to human. This article describes the risk assessment of nitrofurans in food based on the reports of JECFA 40th meeting and the reports from ESFA. Based on the toxicology and dietary exposure data, the nitrofurans exposure in our diet and its risk to human health were described, which could provide a reference for the supervision of nitrofurans in food.
